Dubai chewy cookies feature a soft stretchy chocolate-marshmallow chewy outer shell and core filling of creamy pistachio paste mixed with crispy shredded kataifi pastry, which requires specialized machinery to wrap loose crispy filling inside sticky elastic dough automatically.
