Catalase (CAT), an enzyme that catalyzes the decomposition of hydrogen peroxide into oxygen and water, is present in the peroxide body of the cell. Catalase is a marker enzyme of peroxisomes, accounting for about 40% of the total amount of peroxisome enzymes. Catalase is used in the food industry to remove hydrogen peroxide from milk used to make cheese. Catalase is also used in food packaging to prevent food from being oxidized.
Definition of Catalase Activity
One unit (U) of catalase is defined as the quantity of enzyme, which liberates 1μmol hydrogen peroxide per minute at 30℃, pH6.8.

Fuction of Habio Catalase Powder Food Grade
