Mechanism of action
Convertzyme 260D selectively hydrolyzes α-1,4 glycosidic linkages in starch polymers, effectively reducing both molecular weight and system viscosity. Enzyme activity is precisely controlled through thermal inactivation once desired viscosity is achieved, resulting in permanent stabilization of rheological properties.
