1. **Composition**
- Industrial pregelatinized starch mainly consists of starch, with its raw materials sourced widely from corn, potato, cassava, etc. After the pregelatinized treatment, the chemical structure remains basically unchanged, but the physical properties have changed significantly.
2. **Physical Properties**
- **Appearance**: It usually appears as a white or light yellow powder, with a fine texture and no obvious odor.
- **Solubility**: It has the characteristic of being soluble in cold water. This is because the pregelatinization process disrupts the crystalline structure of the starch granules, enabling the starch molecules to quickly absorb water and swell in cold water, forming a uniform colloidal solution. The dissolution speed and the transparency of the solution are affected by factors such as the type of starch and the degree of pregelatinization. For example, starch with a high degree of pregelatinization dissolves faster in cold water and the solution has higher transparency.
- **Viscosity**: The pregelatinized starch solution has a certain viscosity, which is related to the concentration, temperature, and source of the starch. Generally, the higher the starch concentration, the greater the viscosity of the solution; as the temperature rises, the viscosity will decrease. Pregelatinized starches made from different sources of starch, such as corn pregelatinized starch and cassava pregelatinized starch, may have different viscosities under the same concentration and temperature.
- **Gel Properties**: Under certain conditions, the pregelatinized starch solution can form a gel.
