Sorbitol, chemically known as 1,2,3,4,5,6-hexanehexol, with the chemical formula C6H14O6 and a relative molecular mass of 182.17 (according to the 2007 international relative atomic mass), has two optical isomers, D and L. It is a white, hygroscopic powder or crystalline powder, flakes, or granules, and is odorless. It is widely distributed in the fruits of plants in nature and is commonly used in food as a sweetener, leavening agent, and humectant.
