Carnosine (L-Carnosine), scientifically known as β-alanyl-L-histidine, is a dipeptide composed of β-alanine and L-histidine, and is a crystalline solid. Muscle and brain tissues contain high concentrations of carnosine. Carnosine possesses strong antioxidant capabilities and is beneficial to the human body. It has been shown to scavenge reactive oxygen species (ROS) formed by the excessive oxidation of fatty acids in cell membranes during oxidative stress, as well as α-β-unsaturated aldehydes.
