Food Grade Sodium Alginate E401 - Thickening and Stabilizing Agent Soluble in Water with 20-100 mPa.s Viscosity
Food Grade Sodium Alginate is a natural polysaccharide compound extracted from kelp. This pale yellowish powder is odorless and tasteless, dissolves in water but is insoluble in alcohol and other organic solvents.
Product Properties
Viscosity in 1% solution: 10-20 cps (Brookfield viscometer). As the sodium salt of alginic acid, this gum extracted from brown algae cell walls serves as a viscosity enhancer and emulsifier with no discernible flavor.
Gel-forming properties: puddings, mousses, pie and pastry fillings, dessert gels, restructured foods
