Food Grade Sodium Alginate is a pale yellowish powder, odorless and tasteless, that dissolves in water but is insoluble in alcohol and other organic solvents. This natural polysaccharide compound is extracted from kelp and features a viscosity of 10-20 cps in a 1% solution (Brookfield viscometer).
As the sodium salt of alginic acid, this gum extracted from brown algae cell walls serves as a viscosity enhancer and emulsifier in food applications. It is also used in indigestion tablets and dental impression preparation.
