Canthaxanthin, also known as flavonoid, is a ketocarotenoid with the chemical formula C40H52O2, naturally found in mushrooms, crustaceans, fish, and algae. Its industrial products are deep purple crystals or orange-red powder, slightly soluble in vegetable oils, and must be stored away from light to maintain stability. This substance has antioxidant properties, protecting cells from free radical damage. As a colorant, canthaxanthin is pH stable and light-resistant, and is widely used in the food, feed, and industrial sectors.
Highly Effective Coloring Agent: As an orange-red pigment, canthaxanthin effectively deposits in egg yolks and poultry skin during animal husbandry, giving egg yolks the consumer-preferred orange-red color and poultry skin and shanks a golden-yellow hue.
Strong Antioxidant Function: Canthaxanthin possesses the ability to quench reactive oxygen species and scavenge free radicals, exhibiting outstanding antioxidant effects. This property helps enhance the animal's immunity while also protecting the fat components in food and delaying oxidative spoilage.
Animal feed additive: This is one of the most important uses of cantharidin. Adding it to laying fowl feed deepens and makes the yolk color more uniform; adding it to broiler feed improves the color of their skin and shanks, meeting market demand for poultry products with specific colors. In aquaculture, it is also used to color shrimp, salmon, and other aquatic products.
